Tikka Salmon Traybake

A delicious easy one bowl one tray dinner the whole family will love. I use an easy tikka paste to make the marinade and you could use any one you like. Remember that this will work with tofu, prawns, other fish or chicken, you will just need to adjust the cooking time.

Serves 2

For the marinade

2 heaped tbsp greek yogurt

1tsp tikka masala paste of choice

1/2 tsp salt

2 Salmon Darns

Mix the yogurt, paste and salt well in a non metal bowl, add the salmon, spoon the marinade over it and cover and chill for about an hour or more if you have it.

Tray Bake Veg

3 shallots, trimmed and halved

2 cooked red peppers sliced

3-4 medium potatoes peeled and sliced into 5cm pieces

11/2tbsp oil

1tsp salt

Toss all the veg in the oil and season. Spread onto a flat tray lined with parchment and bake for 15mins approx until the potatoes are almost cooked. Remove the salmon from the marinade and place over the veg and put back into the oven for about about 12 minutes until the salmon is done.
