Oat & Raisin Chocolate Cookies

This is a lovely chewy bake, easy to make and a perfect sweet treat. You can throw a scoop of protein powder into the recipe very easily if you want to improve the nutritional profile but you know sometimes a cookie should just be a cookie!

Makes 15

Oven at 170C

125g butter, margarine or melted coconut oil

2 eggs

a splash of milk of choice

140g sugar (I used half and half brown sugar and white castor sugar)

1tsp mixed spice

190g plain flour

1tbsp cocoa powder

1/2tsp salt

1 tsp baking powder

50g porridge oats

100g raisins

Method

Add everything except the raisins to a bowl and beat until it is incorporated.

If you add the protein powder it might be a little dry so if so, add a little more milk

Stir in the raisins.

Drop tablespoons of the mix onto a parchment lined baking sheet..

Leave room for them to spread.

Bake for 12-15 minutes until they look cooked. Let the cool and store in an airtight container.
