Chickpea Salad with Harissa Vinaigrette

Chickpeas are a wonderful source of plant protein and fibre, They also take flavor really well and love lots of a good dressing. This is a versatile recipe because your vegetarian or vegan can enjoy and you can serve some fish or other protein with it if needed.

Chickpea Salad with Harissa Vinaigrette

Harissa Vinaigrette

1tsp harissa paste

1 clove of garlic mashed

1tsp salt

1tbsp honey

juice of 1/2 lemon

75ml Extra virgin olive oil

Mix everything well , check for seasoning and set aside until needed.

Chickpea Salad - serves 4 as a side

1 tin of chickpeas drained

2 handfuls of green beans, trimmed blanched and chopped

3tbs small sweet red peppers or you can use 1 cooked red pepper in slices

2 handfuls of fresh flat leaf parsley chopped

Mix everything together gently, season with salt, pour over the dressing and let sit for a while to let the flavors develop.

Serve
