Very Veggie Curry

Hot Sweet & Spicy - this vegetable curry can be served with rice and is easy to make, nutritious, full of vitamins minerals and fibre.

Makes enough for 2 hungry people or 3-4 bulked out with rice

2tbsp oil

1 Medium white onion cut in half and sliced

1heaped tsp chilies in oil

1tbsp dark brown sugar or coconut / palm sugar

1tsp each ground coriander and cumin

1/2 tsp turmeric

1 sweet potato peeled and cubed

1 small cauliflower trimmed into small florets

1 400-ml tin coconut milk plus half again water(low fat if you wish)

2tbsp fresh coriander

Optional juice of 1/2 lime and 1-2tsp soy

Method

Heat the oil over moderate heat and cook the onion until golden.

Add the chilies in oil, the spices, brown sugar and a splash of water, mix well and then add the coconut milk and water, season well and mix to combine the milk into the onion spice mixture.

Tip in the veg, mix well to cover and cook over a gentle heat, covered until the veg are tender. Taste and adjust seasoning with a little lime juice and soy as needed.

Sprinkle over some fresh coriander and serve with rice.
