Panko & Herb Crust Salmon

As an oily fish Salmon in my opinion really needs lots of seasoning to complement the flavor so don’t skimp on the lemon zest, salt and pepper in this recipe. You can prepare this in advance, cover in cling film and leave in the fridge until you are ready to cook. A really healthy choice fish loaded with heart healthy omegas.

Serves 3-4

Oven at 190C

1 cup panko breadcrumbs

1 spring onion trimmed and finely sliced

2tbsp each fresh chives and flat leaf parsley chopped

zest of a lemon

1tsp of salt and 1/2 tsp pepper

2tbsp Oil

4tsp Dijon mustard

4 Salmon Darns

Method

Add crumbs, spring onion, chives, lemon zest, salt and pepper to a bowl, drizzle over the oil, mix well and tip out onto a flat plate

Spread 1tsp dijon mustard over each darn and press into the breadcrumbs

Place on a parchment lined flat sheet

Press any left over extra crumbs into the salmon darns to give them a nice thick coating

Bake for 20 minutes until cooked through and nice and golden brown

Serve with veg of choice
