Potato Spring Onion and Herb Frittata

I love these for a quick evening meal or filling lunch if I have a busy evening out at training.Serve with a big green salad, some hummus and a side of bagel or sourdough and I am in heaven.

This would serve 2.

Ingredients

6 large eggs

2 spring onions trimmed and chopped

2 medium potatoes peeled and grated - be careful of your hands

3 tbsp of chopped fresh herbs, chives, Italian parsley, basil - use your favourite

optional 2tbso grated vintage sharp cheddar

Add the eggs to a bowl and whisk, tip in the potato, spring onions, herbs, season well and mix again.

Heat 1tbsp oil in a medium frying pan over a hot heat, tip in the mix and spread out well to cover the base of the pan.

Turn the heat down to medium and cover the pan (use a large pot lid) and cook gently until the Frittata is almost set, probably about 8-10 mins.

Get a plate wide enough to hold it and tip the Frittata out onto the plate, cover with another plate and flip and put back into the pan. Sprinkle the cheese over if using and cook for another few minutes to finish the bottom.

Serve as directed - absolutely delicious.
