One Pot Chicken Casserole

Nothing better than a recipe which can be done all together. This is full of flavour, loaded with fibre, vitamins and minerals AND if you fancy a meat free day, simple toss in a tin or 2 of chickpeas instead of the chicken and enjoy.

Ingredients

4 chicken breasts sliced and tossed in a mix of 1 tbsp flour and smoky paprika

Optional glug of madeira

1 tbsp oil

 1 medium white onion

1 heaped tsp chopped garlic

1 large carrot diced

2 cooked red peppers  (from a jar ) sliced

1tsp each sweet and smoky paprika

1tsp salt

4 potatoes peeled and cubed

500ml stock

3 large handfuls of washed spinach

100ml cream

 Heat the oil in a big pot and cook the chicken until just browned on both sides. Tip into a bowl. Deglaze the pan with the madeira if using. Otherwise add another bit of oil in if needed and add the onion, carrot, garlic, potato and cook over a medium heat with the lid on until softening about 5 mins. Tip in the spices and sliced red pepper and cook for another few minutes then add the stock and the chicken and cook for 15 mins over a medium heat until the chicken and potato are cooked, Season to taste, stir in the spinach and cream and simmer for 2 mins with the lid on and serve. Delicious and a perfect one pot meal.
