Cauliflower Potato and Spinach - Aloo Gobi & Spinach

Serves 6 as a side

2 tbsp veg oil

1 med cauliflower – break into florets

4 large potatoes peeled and cut in to 2″ chunks

1 large onion peeled and chopped

2 tsp each of finely chopped ginger and garlic

1tbsp tomato puree

1 tsp each cumin seeds, tumeric, garam masala,nigella

1 red chili finely chopped

1 bag of spinach wilted on the pan and drained

3 tbsp fresh chopped coriander to finish

juice of half a lemon

Heat the oil in a large pan and add the onion, chilli and ginger, garlic and cook without colouring for a few minutes. Add the spices stir well and gently cook out for a minute then add the potatoes and cauliflower and mix well, add some water to just cover and simmer covered for about 15 minutes until the potatoes and cauliflower are tender OR you can thow this into the oven aod cook until the veg is tender,

Stir in the spinach, lemon juice, the coriander and let finish cooking for a few more minutes. Taste and adjust your seasoning as needed and serve.
