Bean and Nut Burgers

Most of us need to add more plants into our diets and having a few meat free days is especially good for our overall health and wellbeing not to mention our household budget.

These are so easy to make, full of flavor and nice and filling.

Mixed Bean & Nut Burgers
1 small white onion
1 garlic clove
1 tin of red kidney beans rinsed and drained
1 tin  of butter beans rinsed and drained
50g chopped mixed nuts of choice
1 tbsp each of soy sauce , sweet chili sauce or a mango chutney

1tsp cumin and ½ tsp turmeric

1 tbsp lemon juice
Salt pepper to season

 Oil to fry

Method

Peel and chop the onion and garlic finely
Heat oil and fry them until softened
Add the beans and spices and fry gently for about 5 minutes

Transfer to a food processor and pulse gently to form a rough paste not mush and then transfer to a bowl
Stir in soy, sweet chilli or chutney lemon juice, nuts and season generously.
Cover and set aside to let the flavours develop – preferably for about an hour
Divide the mixture into 4 equal portions and shape into patties
Heat a little oil in a heavy based frying pan and fry the burgers for a minute on each side until golden brown.
At this point rather than keep frying to heat through, I transfer to a hot oven for about 10 minutes.
