Cauliflower & Potato Curry

Serves 4 - 6

A classic potato and cauliflower recipe I have cooked so many times and never get sick of it.

6 potatoes peeled and cut into chunks

1 medium head of Cauliflower, cut into bite size pieces

2 red onions sliced

2 cloves garlice peeled and mashed

1tsp each of turmeric, nigella seeds, chilis in oil, and cumin

2-3 tbsp oil

2 tbsp fresh chopped coriander to serve

Cook the potatoes in a pot of salted water for about 10 minutes, till partially cooked.

Drain the potatoes, then put them in a large baking tray and add everything else except the coriander. Toss really well to mix and season with lots of salt.

Roast for about 20 minutes until the cauliflower is golden, the potatoes are crisp and everything smells amazing.

Sprinkle the coriander on top and serve.
