Spicy sweet potato frittata

Peanut rayu is a spicy peanut condiment which is just delicious. If you can’t get it you can use your favourite spicy sauce or simply go the sweet and smoked paprika route which is also delicious.

 Serves 2

1 med sweet potato, peeled and grated

1 tbsp each of flat-leaf parsley, mint, and coriander chopped

1 tsp each smoked & sweet paprika or

1tbsp peanut rayu

15g butter

4 eggs

 Method

Tip the sweet potato into a bowl. Add the herbs and paprika if using and season to taste.

Beat the eggs well, add the peanut rayu if using and add to the sweet potato and mix everything.

Melt the butter in a large frying pan and tip all the sweet potato / egg in. Gently spread it all out and cook over a medium heat until it is set on the bottom. Make sure there is no runny egg and then use a plate to flip to the other side and cook for a further 6 minutes or so until the sweet potato is cooked.

Serve warm with a green salad on the side or bring extra to work.
