Lentil Burgers with Mango Relish and Basil Mayo

Split Lentil burgers with Mango and Tomato Relish & Basil Mayo

Makes 3

180g split lentils

1 tsp dried mixed herbs

1 clove of garlic peeled and mashed

40g Panko separated

Method

Rinse the split lentils and put into a pot, cover with water and cook over a medium heat until just cooked.

Drain and cool slightly, then tip into a blender, add the rest of the ingredients and half the panko and pulse gently.

Cool then shape into 3 or 4 patties, coat in the rest of the crumb and chill.

Het a splash of oil in a large pan over a medium heat and add the patties and fry for 5 minutes a side. Turn gently!

Serve on ½ bun with mango and tomato relish and the basil dressing with some root fries to accompany.

Mango and Tomato Relish

½ mango diced

4 small plum tomatoes, de-seeded and chopped

½ small red onion sliced

Combine everything and drizzle over a small splash each of oil and red wine vinegar

 Basil and Mayo Dressing

3 tbsp good quality mayo

2 tbsp fresh chopped basil

1 clove of garlic peeled and mashed

Blend everything . Add a splash of oil if needed.
