Baked Penne with Sausage, Broccoli & Peppers

Serves 4-6

Veg, Penne and Tomato Sauce topped with melted parmesan

Ingredients

1/2 head broccoli in florets

2tbsp oil

500g sausages sliced

2 garlic cloves peeled and minced

3 peppers cored and sliced (I use red and yellow)

I tin chopped tomatoes

250ml tomato puree

300-400g fresh pasta

4tbsp grated Parmesan separated 3/1

3tbsp cream

Preheat the oven to 170

Bring a pot to the boil and blanch the broccoli until almost done and plunge into ice cold water immediately to cool down. Set aside.

(Use the same water to cook the penne in)

Heat the oil over a medium heat and cook the sliced sausages until browned and almost fully cooked. Set aside until needed. Add a little more oil to the pan if needed and add the peppers and onions and cook until soft about 4 minutes, Add the garlic and cook for another minute or 2.Stir in the tomatoes and tomato puree, season well and bring the sauce up to a gentle simmer . Stir in the Parmesan, cream, cook for 2 more minutes. Meanwhile cook the penne until done and retain pasta water incase you need to thin your sauce a little. Add the broccoli and sausage to an oven proof casserole . Tip in the penne and cover everything with the sauce, add a little pasta water if you need it. Scatter a little more Parmesan on top and cook for 20 minutes until hot and bubbling. If you wanted you could scatter over a few olives before you cook it although I cant do that in my house as Eva isn’t a fan.

Serve as is or with a side of garlic bread.
