Baked Feta with Lentil Salad

For the Feta

1 block of feta

1tbsp oil

1tsp garlic peeled and chopped

½ tsp smoky paprika

1tsp oregano

½ cooked red pepper sliced

1 tsp capers

½ tsp chili flakes

 

Add half the oil to base of oven proof dish, add the feta and sprinkle everything else over it and the rest of the oil. Bake for 20 minutes, turn on the grill and give it about 5 minutes under it to char the top a little. Serve with some crusty bread and the lentil salad below.

 

Lentil Salad

250g lentils

1 carrot peeled and grated

3tbsp fresh chopped herbs of choice (Mint, Chives, Coriander)

2 Spring onions trimmed and sliced

Cook the lentils in water or stock according to packet instructions until just cooked. They are nice with a tiny bit of bite. Rinse and add to a bowl, season well and stir in the carrot, spring onion and all the fresh herbs. Add the dressing below and serve with the baked feta.


Dressing

Juice of ½ lemon

25ml Extra virgin olive oil

2tbsp white wine vinegar

1tbsp honey

½ tsp Dijon mustard

Whisk everything together and pour over the lentils while still a little warm. Mix gently and serve with the Feta.
