Rocket Roasted Plum and Mango Salad with Burrata and Pumpkin Seeds

The dressing for this uses a jar of chutney I found in the press, as the base – Im pretty sure most houses have one of these lying around somewhere so feel free to experiment with which ever one you have – it makes a delicious base for a dressing.

Serves 4 as side

1 Bag of Rocket, washed

1 Mango peeled and sliced

2 Plums quartered

1tbsp Balsamic Glaze

Handful of Pumpkin Seeds

100g Burrata or similar

 Dressing

1 heaped tsp apple chutney or similar

40ml Balsamic Cider Vinegar

100ml Olive oil

Salt and Pepper to Season

Method

Wash and quarter the plums, toss in the balsamic and roast for about 10 minutes then let cool.

Whisk all the dressing ingredients together, taste and adjust as necessary.

Spread the rocket out on a serving plate, Scatter the mango and plums over, break up the burrata and gently add to the plate, dress with ½ the dressing, scatter over the seeds and serve, with the rest of the dressing on the side.
