These are the easiest 4 ingredient cookies - KIDS LOVE making them as they are so easy. You can mix them up with combination of flavors I have listed but feel free to experiment with your own. The dough will store in the fridge until you want to bake some more.
Oven at 180C
Makes about 20 - I make 2 batches of flavors listed below
220gr of flour of choice - you can use gluten free, or 1/2 almond, 1.2 plain.
Lemon and Pistachio - zest of 1/2 a lemon and 1oz chopped pistachios
Dark Chocolate and Pecans - 2oz chopped dark chocolate and 1oz chopped pecans.
Mix all the cookie ingredients together until you have a smooth dough. Tip out onto some cling film, flatten slightly and chill for 30 minutes.
Remove and divide into 2 and mix the pecan and chocolate into one batch and the lemon zest and pistachio into the other, Roll each into a log, wrap in cling film and chill again.
cut each log into 10 even slices and place on a lined baking tray. Bake for 12 minutes and cool before enjoying.
