Spinach Bites

These are so easy to make, I use frozen spinach as there is so much of it in each cube versus contents of a bag, it is so easy to prepare, just take out what you need that morning or a few hours before you need it.

4 large cubes frozen spinach (about90g)

50g bread or cracker crumbs

1 spring onion chopped

1 large cooked red pepper chopped

30g grated Parmesan

1tbsp spicy sauce like chilli sauce, sriracha or franks hot sauce (optional)

4 tbsp chopped fresh herbs of choice preferable chives, mint, basil and flat leaf parsley

Lots of salt and pepper to season

When the spinach is defrosted, squeeze it well to get rid of all the water, roughly chop it and add it to a food processor with everything else and blitz to form a rough biscuit dough like texture.

Shape into walnut size balls or bigger burger style shapes, and place on a parchment lined baking tray. Bake for 10-15 minutes depending on size.

Serve with a big green salad, slaw of choice and some hummus or guacamole.
