These three flavors work fab together and it is a cinch to make vegan, gluten free, you name it, this recipe works. Wait until you bananas are really ripe as they make the best results.
Oven at 170C
3 ripe bananas
200g thick natural yoghurt of choice
1tbsp lemon juice
100ml melted butter or coconut oil, cooled
1 cup (166g) wholemeal flour or your choice of gluten free flour mix
1/2 cup (70g) almond meal
1tsp espresso powder
1tsp baking soda
70g coconut sugar
80g dark chocolate chopped finely
Beat the yogurt, banana, oil and lemon juice together
Stir all the dry ingredients together (apart from the chocolate) and mix in the wet until you get a thick batter
Pour into a greaseproof paper lined baking tray mine was approx 15cm by 25cm
Sprinkle over the chopped chocolate and bake for 25 minutes until a skewer comes out clean.
Let cool then slice and enjoy.
